Tom Saaristo - Blue Ribbon Carrot Cake
Blue ribbon carrot cake is a recipe I devised many years ago when I was asked to prepare one for a birthday party. The only stipulation was "no nuts". That got me to thinking about how carrot cake is one of those things that people love or hate and how I could come up with a recipe that would please everyone. So I started by taking out the walnuts as requested. Then I took out the pineapple because people feel the same way about pineapple as they do carrot cake. Then I toned down the spices. Carrot cake is not traditionally a spice cake and many people who don't like it don't care for the strong spices, so I took them all out except the cinnamon. I kept the carrots, of course, and added a combination of dried fruit including moist golden raisins and chewy dates. I didn't fuss with what everyone loves about carrot cake, the cream cheese frosting. This has been part of my baking repertoire for many years and I did win a bake-off at work one year with it. I think my Blue ribbon carrot cake should win so everyone has a chance to try it, especially those who don't like carrot cake. I like changing peoples' minds about such things. They'll soon discover that this diner dessert classic can be enjoyed by everyone.
Marguerite Rochkus - Pumpkin Squares
Was looking for a different twist on pumpkin pie for Thanksgiving. Everyone loved it. It is a great alternative to just plain pie. Many who don't eat the pie will eat this version. I think the taste will tell you it is a winner! Been making it for many years now. Hope you will try it!
Carrie Clark - Chocolate Perfection
I invented this stripped down recipe after reading a lot of recipes for chocolate mousse and puddings. When I asked my older brother to taste it, he closed his eyes and said, "It's perfect. It's chocolate perfection." Yes, it is!
Lori Holtzman of Glori of Food - Blueberry Cake
This blueberry cake has been a family favorite for many years. Every winter my family goes to Tucson, AZ to be with my extended family. My aunt spends the weeks prior to our trip preparing by baking and cooking. Every year when we arrive my giddy aunt presents the fruits of her labor. But no matter what, everyone is most excited for the addicting blueberry cake. About seven years ago I became privy to this recipe and I have been wowing people with this cake ever since, the same way my aunt wowed us. I think this cake will win over the tummies of your patrons and keep them coming back for more. Or maybe that's your corned beef!
